We tend to associate Argentina with the tango, great soccer players and polo matches. Then there are huge expanses of grasslands, called the pampas, with gauchos tending to massive herds of cattle. On the wine side, rich, red Malbecs have made their mark world-wide. But, they have a very thriving sparkling wine industry, also. Cavas Rosell Boher produces bottle-fermented bubblies by the time-honoured Champagne method. But it is labelled Methode Tradionelle in order to respect appellation laws and not annoy our colleagues in France. With a blend of 70% Pinot Noir and 30% Chardonnay, it spends 18 months resting in the bottle once the secondary fermentation has been finished. On the nose we get citrus notes with a pleasant bit of dough and yeastiness. The steady stream of pin-point bubbles, with its fine acidity, lingers on the palate with a captivating freshness. Decanter Magazine gave it 92 points. Savour on its own or pair with Oysters. A tantalizing squirt of lemon juice or tabasco sauce on the oysters will be guaranteed to add a bit of zip to your lip.
