BUBBLICIOUS BURGUNDY: THIS BRUT’S NO BRUTE

In addition to some of the world’s finest and sought-after red and white wines, Burgundy produces delicious, high quality sparkling wines. Fermentation takes place in each bottle not in huge bulk tanks in gargantuan quantities like huge commercial brands. Burgundy’s signature grape varieties, Chardonnay and Pinot Noir, are the primary base wines of the cuvées to which yeasts are added so the secondary fermentation can take place. This creates the bubbles we all love to admire and enjoy. The bottle fermentation is the same procedure as in Champagne production. But it is known as the Methode Tradionelle so as to not contravene French law. Called Cremant de Bourgogne, the grapes are sourced from vineyards located in the surrounding Côte de Beaune, Côte de Nuits and Côte Chalonnaise. With varying sub-strata including marl, limestone and granite, the soils will impart different nuances to the grapes reflecting the terroir. This blend of 70 % Chardonnay, 20 % Pinot Blanc and 10 % Aligoté gives us a toasty, rich and elegant bubbly. Champagne character at Chevrolet prices! The venerable house of Labouré-Gontard, the supplier, based in the famous wine town of Meursault, is a long-established sparkling wine specialist.
